This week COOMAP holds the course on Dairy Products – Special Products, focused on cooperative members, producers and their families who have already taken the basic course on Dairy Products. It lasts 40 hours, from Monday until Friday at Dom Bosco Sports Court, taught by Senar Minas/Rural Union of Paraguaçu, through the instructor Giancarlo Ferreira.
“In this course, we produce morbier, provolone, parmesan, processed and rennet cheeses, in addition to a milky drink, dulce de leche in pieces and creamy cream cheese. And as an extra, we are going to teach participants how to make chancliche cheese, which is a very popular Arab cheese, as well as Reino cheese and Greek yogurt, which also have a lot of output and very good added value”, says Giancarlo Ferreira.
The 10 participants are learning the entire milk pasteurization process and manufacturing techniques of the aforementioned products. They’ll also learn about legislation, registration with inspection and labeling bodies, notions of good manufacturing and cleaning practices, and disinfection of the environment, containers, utensils and the workplace. By providing all this knowledge to its members, their families and the community, COOMAP fulfills one of its objectives, which is to promote their qualification and improve their quality of life.
